Enchilada Casserole--TACO TUESDAY!!!



Enchilada casserole!! Yummy!! You would never know there isn't a tortilla in the pan!! Easy, excellent! Just takes about an hour in the oven, so don't be in a hurry!!


Crust:
Melt 2 oz cream cheese ( I used 1/3 fat) and 1 cup of queso (or Mexican blend) cheese
Mix in 2 eggs and 1 teaspoon of taco seasoning from a packet mix. Spread on greased 13x9 pan and bake until it starts to brown. About 30 minutes at 350 degrees.
Topping
Brown 1 1/2 pounds ground beef. (you can use chicken or pork, too.  It will just change the nutrition at the bottom)  Mix in remaining taco seasoning packet and 10 oz enchilada sauce. Poor mix over baked crust. Then top with 2 cups of queso or Mexican blend cheese and bake for additional 25 minutes at 425 degrees until golden bubbly.

This is great to make, portion out, and freeze.  Tastes like fresh reheated from frozen in the microwave!

6 servings. 475 calories, < 3carbs, <1 sugar, I topped with lettuce, but you could add peppers, tomatoes, rotel, or other veggies! Enjoy!!
