One of my favorite memories of dad's cooking skills, warm egg custard!! It was definitely NOT his meatloaf surprises---YUCK!! On cold winter days, I remember dad making his custard, I have no clue where the recipe came from, but it was sweet and yummy right out of the oven and I remember us kids getting very little of it!!
When I started the keto journey I looked up dad's recipe and realized why we loved it! TONS of sugar!!! So today I thought I would try to tweak the recipe to make it sugar free and lower carb. IT WORKED!!! It was awesome this morning!!!! Not as good as I remember dad's, of course, but a definite close replica!! This will be made on cold winter days!
Custard
6 eggs
1 cup whole whipping cream
1 cup water
1/4 cup stevia
1/4 teaspoon salt
1 tablespoon vanilla
Lots of cinnamon to sprinkle on top

In a sauce pan, warm cream and water (the original recipe called for scalded milk). Let cool. In a bowl, mix eggs, stevia, salt and vanilla. Slowly temp the cream into the egg mixture. Mix completely. Pour into baking dish, top with cinnamon and bake at 325 for about 45 minutes until a knife comes out clean.
4 servings are about 315 calories, 2 carbs and 0,25 g sugar each. Kids poured a little sugar free syrup to sweeten, it didn't need it, but you know kids!!
