Comfort foods... who doesn't love a good ol' fashioned casserole right out of the oven? The aroma takes you back to Sunday lunch at Grandma's house. Heavy, filling, delicious!!! Well, the only problem with most comfort casseroles are that they are loaded with calories, carbohydrates, and sugars.
This is one of my MOST favorite low carb, almost 0g sugar casserole creations!! Tastes just like a comfort casserole, but not bad on the waist line. After a lot of looking around at recipes, I decided to take some of the ideas and just create my own.
First of all, I needed to have cheese... lots of cheese. Secondly, crunchy onions!! I am not a pickle fan, not a mustard lover, and ketchup is ok i suppose. So most of the other recipes I had come across had way too much of all of that other stuff. Not only did I know the flavor wouldn't be what I was looking for, but the carbs and sugars would be much higher.
Those crunchy onions, though, yummmm. Not only do they give a little crunch, but they add great flavor! Not an onion fan?? No problem, omit them! Just want a little onion flavor?? No problem, switch them out for just some onion flakes. That will also lower the carb and sugars. When I know I am having this for dinner, I will save up for the few carbs in the recipe. The onions make the recipe for me.
Super simple to make. Super filling, and Super delicious! My 6 year old loves it, too!! It can be made ahead of time and baked later. Or, do what I do, bake the casserole, portion it out and freeze the extras for a quick dinner you can reheat in the microwave later.

CHEESEBURGER CASSEROLE
1lb ground beef
4oz cream cheese
3 eggs
138g bacon bits
9oz cheddar cheese
3oz fried onions
4oz cream cheese
3 eggs

3oz fried onions
Brown beef then melt in cream cheese. In another bowl, mix eggs, bacon, and cheese. Add beef. Mix well and spread in 9x13 pan. Top with onions. Bake at 350 for about 25 minutes or until bubbly. 6 servings at about 560 calories 7 carbs and less than 1g sugar.
