Let's just put it out there... I love chocolate chip cookies. One of the few things I can turn down and not regret walking away from. I was always on the hunt for the best chocolate chip cookies. I had a pretty awesome recipe. They were full of butter, brown sugar, and maple flavoring. My favorite chocolate chip cookies always had great brown sugar taste. Mmmmm, I miss brown sugar.

Each recipe I have found so far that is sugar free and low carb does NOT, repeat NOT, taste like chocolate chip cookies. They are hard, no flavor mounds of yuck. Don't call something a chocolate chip cookie if it doesn't really taste like one!! Major letdown!
I bought Fatsnax cookies, they were actually pretty darn good. But, there were 7 carbs in each cookie, and the cookies were pretty small. My guess is they used swerve confectioners sugars. They were a sweet tasting cookie, not a fake sugar taste, but still didn't have that old fashioned brown sugar taste.
I read the ingredients. They had mostly the same stuff most cookie recipes use, but theirs had coconut oil and that xanthan gum. I am 7 months keto and sugar free. I have not bought any of that gum stuff yet, or looked into it much, but what I see is it helps with the texture of different foods. I currently have some in my shopping cart from Amazon, just haven't 'proceeded to checkout'! I opted for the butter vs oil, because, let's be real... Who doesn't love butter?!?!?
So, I have come up with this recipe. These are a good cookie, definitely not like the original cookies I used to bake, but a great alternative that is sugar free and low in carbs. There are 18 in a batch, each cookie has about 100 calories, 5 carbs and 0 sugar. I add a little molasses and maple flavoring to the recipe to try to give them a more brown sugar taste.

Chocolate Chip Cookies
8 tablespoons butter
2/3 cup stevia sweetener
1 egg
1 teaspoon vanilla
1 teaspoon molasses
1/4 teaspoon maple extract
1 1/4 cup almond flour
1 tablespoon coconut flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar free chocolate chips
2/3 cup stevia sweetener
1 egg
1 teaspoon vanilla
1 teaspoon molasses
1/4 teaspoon maple extract
1 1/4 cup almond flour
1 tablespoon coconut flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar free chocolate chips
Bake at 350 for about 10-12 minutes. Taking them out at 10 minutes made them way softer and tastier!!
