Breakfast casserole and PANCAKES!

Let's just put it our there.... I LOVE BREAKFAST!!!  

What could be better than a big plate of yummy, down home comfort foods, eating while wearing your jammies, and enjoying a warm morning mug of choice!!  Can you picture it, warm, cozy, comfy!!  So calm and even leisurely!  YA RIGHT!!!!  That kind of breakfast only happens on occasional holidays and on that vacation you take every 3 years!!


Reality check.  Normal morning breakfast time consists of running around trying to find Brock's other shoe, finding out Leah didn't finish her homework, looking at the clock seeing that I am already 15 minutes late and realizing I forgot that I had to be to work early for a meeting.  Oh and shoot, I still need to pack lunches, dash around the kitchen throwing things in a bag and hoping there is something healthy for the kids not just chips and oreos in their lunch boxes! Grab any food of convenience that can travel in the car on the way to work, all while hoping I don't spill my coffee or said food on my shirt... oh wait, too late!!

Sound familiar?  Typical morning breakfast routine for most households, I'm sure!  Is it the kind of morning we would choose, of course not, but that 5 extra minutes of sleep is so much more important!!  I get it, I'm living it, too!

How do we change it??  That question I do NOT have an answer too!!  I'm still hoping for a lottery win, but I don't see that in my future.  I can, however, help with an easy casserole that can be made ahead of time so that you can pop it in the microwave and scarf if down before you start your day.  Or, heat it up at work and eat it while you read your 38 new emails.  



Breakfast Casserole 

1 pound browned pork sausage
120g Bacon crumbles
4 ounces cheddar cheese
18 eggs

Mix the eggs, bacon and sausage.  Put in 13x9 baking dish.  Top with cheese.  Bake for about 25 minutes or until the eggs are set and the cheese starts to brown.  10 servings, about 315 calories, 0 carbs, 0 sugar.  

I portion these out, put them in the fridge, and reheat in the microwave in the morning.  Feel free to add salsa or other veggies.  Full of protein to keep you satisfied.  

Now, on that leisurely morning, don't pancakes sound amazing?!?!?  Wait a minute, pancakes without carbs or sugar???  How is that possible??  Just a little adjustment!


Cream Cheese Pancakes

3 eggs
2T cream cheese (I use the 1/3 fat cream cheese)
1t stevia
1 teaspoon vanilla

Whip together all of the ingredients, I use a bullet mixer, so easy.  Then fry up like regular cakes, you can use oil in the pan for crispy edges, or just lightly spray cooking spray so they don't stick.  Top with lots of butter and sugar free maple syrup, strawberry jelly and real whipping cream, cinnamon and stevia, or any other topping of your choice!! Yum!!

Just the pancakes are about 350 calories, 0 carbs, and 2 sugars.
