Cheesecake! Low Carb and nearly sugar free, from the microwave!!



My mom makes the absolutely best cheesecake, EVER.  Her's is a no bake recipe that has evolved over the years since she has been making it.  It is more of a cheesecake fluff on a buttery mound of sweet graham cracker crust.  Heavenly!

Pretty sure there is marshmallow cream,cream cheese, whipped cream, and lots of sugar in the cake part (plus other stuff) and I know there is a LOT of sugar and butter in the crust.  It is one of those desserts that was at every family holiday dinner.  You don't think about what's in it, you just eat it.  Tradition!

Well, it is hard to find a GOOD low calorie, sugar free, EASY cheesecake recipe.  Most have you mixing, whipping, water bathing, in a million different pans.  Nope, way too much effort, time and patience for me.  I need simple.  No muss, No fuss.

I have tried a couple of no bake recipes.  Nothing is even close to my mom's!! I found this keto fat bomb.  It was really good, but it was over 1300 calories for the whole thing.  Sadly, it was really easy to eat the ENTIRE BOWL.  It was really rich and gave me an upset stomach, but it was so tasty going down. 

Since I follow not only Keto, but sugar free, AND I abide by calories, it is really hard to find just the right recipe.  So after many failed attempts, I finally think I have found something that is not only really easy, but it is in the microwave, AND it is low carb, AND it is nearly sugar free!

I have a crust that can go with this (it actually goes on top), but it adds about 170 calories to the recipe.  Not always worth it for me for the little bit of topping.  Delicious on top, so most of the time I have the cheesecake plain unless I have saved extra calories for the day, then I can splurge with the crust!!!



Cheesecake-Low carb, nearly sugar free and in the microwave!

4 Tablespoons 1/3 fat cream cheese
2 Tablespoons stevia
2 Tablespoons sour cream
1 egg
1/2 teaspoon vanilla

Mix all ingredients until smooth and creamy in microwavable bowl.  

Microwave for 1 minute with paper towel covering bowl.  Continue to cook for additional 30 second increments checking under the paper towel each time.  When toothpick comes out clean it is done.  Let cool completely.  Serve plain or with topping, or a topping of choice.



The nutrition ends up being about 410 calories, 3 carbs, and 3g sugar for the whole bowl of cheesecake.  (crust topping not included)

Crust topping

10g almond flour
10g finely chopped pecans
2 teaspoon stevia
pinch of salt
1 1/2 teaspoons butter melted.  

Lightly toast almond flour and pecans in skillet (about 4 minutes).  


Pour into a bowl with all other ingredients, mix well and let cool.  Crumble on top of cheesecake.  (About 170 calories, 3 carbs, 2 sugar for topping only)

Cheesecake and topping about 580 calories, 6 carbs, and 5 sugars.  Split it with a friend for a perfect dessert!
