Well, sometimes!!
I have tried a few different fat bomb recipes. For the most part, I haven't been a big fan. I found a brownie fat bomb recipe and made it just today. Sounds delicious, doesn't it?!?
I really dislike it when they give foods a name of something really tasty, thinking you will make it because of the name, but then it turns out NOTHING like the name. That was this brownie thing today. You can't mix unsweetened cocoa and cream cheese and think it will be brownie like. Or sweet. Or tasty. It was nasty.
So, to make that recipe edible, I added about 4 tablespoons of splenda and a couple of teaspoons of vanilla. Still not brownie like, but at least they weren't awful, well, they were, but at least I didn't have to throw them in the garbage. Definitely not a fat bomb that I would recommend or make again.
Same goes with some fat bomb recipes that claim to be like chocolate chip cookies. Umm, NO, no sugar, brown sugar or butter flavor?? And you say you are like a chocolate chip cookie, NOPE!! Way to get my hopes up and shoot them into the ground!
Well, I was a bit leary when I decided to work on a peanut butter chocolate chip fat bomb recipe today. However, I was lucky enough to have fat bomb SUCCESS!!
I started out like every other fat bomb recipe... 8 ounces of cream cheese and coconut oil involved. Then for the peanut butter. Wouldn't you know it, I wanted to use 1/2 cup of the natural peanut butter, but of course, I only had 1/4 of a cup. Keto rules say you don't use peanut butter powder in fat bombs, it defeats the purpose. However, I don't like all of the extra calories, so I compromised!
After a few more ingredients, I ended up with a pretty darn tasty fat bomb. However, it wasn't quite right. It was so smooth, too smooth. It needed a little texture. So, I decided to add some chopped up peanuts. Made it pretty darn good!
Peanut Butter Chocolate Chip Fat Bomb
8 ounce 1/3 Fat Philadelphia Cream Cheese
1/3 cup coconut oil
1/4 cup natural peanut butter
1/4 cup dry peanut butter powder
2 Tablespoons Splenda
1/2 cup chopped peanuts
2/3 cup sugar free chocolate chips
Mix the first 5 ingredients to a smooth cream. Stir in peanuts and chocolate chips. Use small scoop to scoop out onto parchment paper. Let them set up in the freezer for 20-30 minutes. Then store in freezer. Makes about 22 bombs. Each bomb is about 120 calories, 3 carbs and 1 sugar.
