Sunday reflection, it's a doozie!!
This has been a ROUGH week. My 2nd week back to work, 1st week with students and getting ready for my own kids to get back to school. Long hours, little sleep!! And add to that a sinus infection from the beginning of summer that won't go away!! (went to the doctor yesterday, hoping to get it gone quick!)
And I am so pumped to say I am actually DOWN 2 pounds this week!! WT?????
3 things saved me...
1. WATER!!! Forcing myself to drink my weight in ounces. The early mornings meant for a few extra cups of hot tea. I count that into my water, whether I should or not... I DO! Drink, drink, drink. Tally the number of refills to keep good count, or get a gallon jug at the beginning of the day and watch it disappear!! Any trick you can think of, but get that water in!!
2. 10K A DAY CHALLENGE!!!! I post challenges on my facebook page, not only for you, but for ME!! I had 10K 4/7 days. I don't exercise. My only exercise is what I get by working around my house and yard, or the steps I get during the day. That is it. Yes, you can actually lose weight without going to the gym everyday! The gym tones and tightens, but the losing comes from the kitchen!
3. And my SAVIOR this week... MEAL PREP!!!! No joke, if I didn't have my meals all ready to throw in the microwave, it would have been an UGLY week. You and I both know when we are tired, we make some pretty bad decisions! There is no tired like first week of school teacher tired! It ranks right next to new mom tired!!
I have been trying to really keep my egg count high to keep the carb count LOW. I start my day with an omelet, and have a few hard boiled eggs and string cheese for lunch. I am full!! All for 0 carbs and around 600 calories. Sugar??? FORGET ABOUT IT!!
I meal prepped an enchilada casserole and cheeseburger casserole on Sunday. The recipes are archived in this blog page. 12 make ahead portions in the freezer. I had a couple omelets for dinner this week, so I already have dinners ready for this coming week, too!!
I HAD DESSERT EVERY SINGLE NIGHT!!!! NO JOKE, and still lost weight!!!!
My cheesecakes are my LOVE!!!!!! 410 calories and about 5 carbs of pure sweet heaven!! I add some sugar free strawberry jelly on top... O. M. GGGGG. I also whipped up a weeks worth on Sunday and had them in the fridge ready to grab! Instant gratification!!!
Gotta be honest, I over did dessert a couple of times this week, yep, that tired, poor choice thing. I made mousse which is low carb and sugar free, but high calories. Dang it, I could have been down another pound!! Oh well, life happens!

One trick I started this week to really up my steps was walking around during commercials. I don't get to watch much tv. But, during a 1 hour tv show, you can actually add around 2000 steps!!! Amazing the amount of advertisements!! The kids actually joined in with me, what a win win!!
