Keto LOW carb Pizza burgers

One of my favorite meals as a kid was pizza burgers.  Hamburger buns with meat and pizza sauce covered in cheese.  Back in the 'olden days' I don't remember popping in frozen pizzas like we do now.  Amazing how easy things have become!

Pizza was not a convenience, but more of a luxury.  We would only have pizza if it was homemade or if we were lucky enough to go out to a pizza place!  I remember getting those Totinos pizzas when we were on summer vacation.  That wasn't real pizza, even though it was good stuff!  Pizza burgers for dinner was like pizza wannabe night!

When I started the low carb lifestyle, I loved the fact that I could have pizza as long as I didn't have crust.  I fell in love with deconstructed skillet pizza.  What a fancy name for putting mozzarella cheese, meat and a little pizza sauce in a pan and frying it until the cheese is melty and the bottom is a little browned.  Yum!! 

Gotta be honest though, there are days where I really want the crust.  There are actually lots of crust options for KETO/low carb eaters.  I have tried a whole bunch of options, some really great and some really not so great.  The cauliflower crust was absolutely disgusting.  I have tried cauliflower enough times to know that I really do hate cauliflower!  I have had the fathead crusts, they are pretty great, but the amount of calories and cheese in them kind of defeats the purpose of getting away from the cheese.  I love the pork rind crust, AWESOME, but takes a long time to bake.  You can find that recipe in one of my older blogs (I use that crust for breakfast pizza, too, YUM!)  What to do, what to do??

One of the first recipes KETO people find is cloud bread. It is only about 40 calories and it is supposed to be used to have a sandwich for the bread cravers.  It does NOT taste like bread.  I does NOT have the bread texture.  It does NOT replace bread!!  I decided that cloud bread did have an awesome place in the low carb plan though!! It quickly became the base of a lot of meals.  It also replaced the bun in the pizza burger recipes!!  I make the recipe of cloud bread ahead of time, freeze them, and pull them out when I need them.

Here is the cloud bread recipe, and how to make them into yummy pizza burgers, and MORE!!

  • CLOUD BREAD

  • 4 large eggs, separated
  • 1/2 teaspoon cream of tartar
  • 2 ounces low fat cream cheese
  • 1/2 teaspoon Italian herb seasoning
  • 1/2 to 1 teaspoon garlic powder

    1. Preheat the oven to 300 degrees F. Line two large baking sheets with parchment paper.
    2. Separate the egg whites and egg yolks. Place the whites in a stand mixer with a whip attachment. Add the cream of tartar and beat on high until the froth turns into firm meringue peaks. Move to a separate bowl.
    3. Place the cream cheese in the empty stand mixing bowl. Beat on high to soften. Then add the egg yolks one at a time to incorporate. Scrape the bowl and beat until the mixture is completely smooth. Then beat in the Italian seasoning and garlic powder.
    4. Gently fold the firm meringue into the yolk mixture. Try to deflate the meringue as little as possible, so the mixture is still firm and foamy. Use an ice cream scoop to make about 10 piles. Spread out the piles to be a uniform size.
    5. Bake for up to 30 minutes. The bread should be golden on the outside and firm. The center should not jiggle when shaken. Let cool completely.  These can be frozen. 

  • Pizza burgers:  Brown ground beef, turkey, sausage, whatever your pleasure.  Drain and stir in a small amount of pizza sauce (watch labels for sugar and carbs!).  Place as much meat as you want on each cloud bread, cover with cheese, I like mozzarella, but you can pick whatever you prefer.  Bake in the oven at 400 degrees until the cheese is golden bubbly!!             
  • Other options:

  • Steak Umms:  Load these cloud breads up with steak meat, cover in cheese

  • BBQ Melt :  meat covered in sugar free bar b que sauce, bacon, cheddar

  • Turkey Melt: Turkey, bacon, Provolone                                    


Can also be used as a grilled cheese!!
