LOW CARB SUGAR FREE KETTLE CRUNCH

So, you have been on track all day.  Worked out, drank your water, and stayed focused with your food.  Awesome day, right???... uht ohhh, the munchies kick in!!  The kids are munching on chips, popcorn, or crackers, hubby has a bowl of ice cream, and you have... nothing but a craving!!  Sugar free jello just isn't going to cut it!!

Something sweet, something crunchy, hmmm.  Not a whole lot of options when you are a low carb sugar free eater!  
Kettle corn would be awesome, right??  Popcorn has quite a few carbs, so that is out.  Any kettle or caramel corn has a lot of sugar, another out! I have seen a few sugar free caramel corn recipes that use pork rinds instead of popcorn and covered in a sugar free coating.  Sounds great in theory, except I love pork rinds IN recipes, but I just can't bring myself to having them as just a snack.  I have tried them, and just don't care for the flavor.  What to do, what to do???

Well, I have done it!!  I created a LOW CARB SUGAR FREE sweet and salty, bite sized, crunchy snack!!  WOOHOO, major win!! For the WHOLE batch, it is about 1200 calories, 27 carbohydrates and 2 sugars.  After it cools, separate it into 6 baggies for  200 calories, 4.5 carbs and 0 sugar.  
LOW CARB SUGAR FREE KETTLE CRUNCH
4 egg whites
1/4 tsp cream of tartar
4 egg yolks
4 ounces 1/3 fat free cream cheese
All of the pieces, I use a big roaster pan

Preheat oven to 350 degree Fahrenheit.  In a mixing bowl, beat egg whites and cream of tartar on high speed until thick, stiff peaks form, about 3-5 minutes.  In another mixing bowl, combine egg yolks and cream cheese. Carefully fold yolk mixture into whites.  I use an ice cream scoop to lay out about 12 piles.  Easily spread out mounds to the size of a hamburger bun.  Bake about 20 minutes until tops start to brown.  Let stand to cool, then tear into bite sized pieces.  Lower oven temperature to 175 degrees.

6 tablespoons butter
1 cup splenda
8 teaspoons vanilla
In a saucepan on low heat, bring to a boil then let cool.  Be careful, it will easily burn.  Pour evenly over pieces of cloud bread.  Sprinkle a little sea salt on top. Bake in 175 degree Fahrenheit oven.  Stirring every 15 minutes or so.  Takes about an hour.
